Each morning when I began my day the first thing that I think of is what am I going to make for breakfast? I could go with the usual, bacon and eggs, or sausage and waffles, or cereal. When I asked my family what they wanted for breakfast, their reply was whatever! That was not the reply I was hoping for.
So, I decided to do something simple and different then what they would normally eat for breakfast. Then I thought about when I purchased my waffle iron, it came with a booklet that included 10 waffle recipes, I had never tried any of them so I thought that this would be a good day to do so. I followed the recipe and instead of using Chives, I used chopped Onions, and that’s only because I did not have any Chives on hand. The waffles turned out perfect, and I did not hear any complaints from my family, I cooked two batches which was 8 waffles and believe me they were gone in no time.
For such a simple recipe that is easy to make, these are delicious, you have your cheese eggs, and potatoes together in a beautiful waffle shape, and the onions give it that special kick. You must try these, my family felt special with these fancy delights and I served them with bacon and fruit, topping them with Ketchup or Hot Sauce is also delicious. CHEESEY EGG HASHBROWN WAFFLES
INGREDIENTS
3 CUPS OF HASHBROWN POTATOES
3 EGGS
1 CUP OF CHEEDAR CHEESE
1/4 CUP OF MILK
1/4 CUP OF ONIONS (optional)
1 TEASPOON OF SALT
1/2 TEASPOON OF BLACK PEPPER
DIRECTIONS
ADD EGGS & MILK, BEAT TOGETHER
ADD HASHBROWNS & CHEESE
STIR IN SALT & PEPPER
ADD ONIONS (optional)
MIX WELL
Preheat waffle iron and brush with melted butter or cooking spray.
Spoon about a half of cup of mixture on each grate and spread evenly.
Close waffle iron and cook for about 5 minutes until waffles are golden brown. Enjoy!
