PITTSBURGH CITY CHICKEN
INGREDIENTS
3 pounds City Chicken Pork (cut into cubes)
3 large Eggs plus 3 Tablespoons of Water (beat together)
2 1/2 cups of Panko breadcrumbs
2 cups of all-purpose flour
1 Tablespoon of Caribbean Sazon Seasoning
1 Tablespoon Garlic Powder
2 Tablespoon Seasoning Salt
1 Tablespoon of Black Pepper
10-12-6” wooden skewers
Oil for frying
3 Tablespoons of Water (for steaming food when you bake)
DIRECTIONS
PREHEAT OVEN AT 350F Degrees
In medium size bowl, season pork cubes with 1 teaspoon of each, Garlic powder, Season salt, Sazon, and Black pepper and set aside.
USING 3 CONTAINERS ADD
Container 1 – 2 Cups Flour – Add to flour 1 Tablespoon of each, Garlic powder, Sazon, and Black Pepper. Then add 2 Tablespoon of Seasoning Salt
Container 2- 3 large Beaten Eggs and 3 Tablespoon of Water
Container 3- 2 1/2 Cups of Panko Breadcrumbs
Now assemble Pork on Skewers, 3-4 pieces on each one, then dip skewers in seasoned flour first, then egg mixture, then coat with breadcrumbs. Do this until they are all coated. Fry over medium heat until golden brown. Then put on a baking pan or casserole dish with rack inside, add only 3 tablespoons of water to bottom of pan, making sure meat does not touch water. Cover it tightly with foil.
Bake covered with foil for 20 minutes, remove foil and bake 10 more minutes, meat should remain crispy. Enjoy!
