When it comes to baking cakes from scratch, a Red Velvet Cake is one that I have always been fascinated by. The beautiful Red Color of the cake usually topped with a cream cheese frosting, is an amazing site for sore eyes. My recipe produced a moist, velvety, buttery cake with a delicious hint of chocolatey goodness. The frosting was so fluffy Buttery, and creamy, it was not too sweet, and it paired with the cake perfectly. Red Velvet Cake is an oil base cake, but when I prepared my recipe instead of using 1 ½ cups of oil, I used 1 cup of oil and ½ cup of melted butter. Using this method, the cake came out with a buttery taste and still very moist. That is the way my Mom would prepare her cake, my Mom was the Butter Queen, this explains how I grew up using Butter in almost every recipe I prepare.
The Holiday’s are approaching, and Red Velvet Cake will be on my menu, but I think what I am going to do is make Red Velvet Cup Cakes instead. When I have a lot of people to entertain, I try to make it easy on myself and others by preparing foods that I can set out for my guess to serve themselves. You have to try this recipe for yourself, it was easy to make and did not take long at all to put together, just mix it like I said in the video, mix the dry ingredients together, than the wet ingredients together, then combine the dry with the wet ingredients. Believe me guys you cannot go wrong with this recipe, just bake it for 30 minutes at 350F degrees and you should have a beautiful, moist, delicious cake. RED VELVET CAKE
INGREDIENTS
2 1/2 Cups of All - Purpose Flour
1 1/2 Cups of Sugar
1 Teaspoon of Baking Soda
1 Teaspoon of Salt
2 Teaspoons of un-sweetened Cocoa Powder
1 Cup of Buttermilk – At Room Temp
1 Cup of Vegetable Oil
1/2 CUP = 1 Stick of Butter (Salted or Unsalted)
2 Large Eggs – At Room Temp
2 Tablespoons of Red Food Coloring
1 Teaspoon of Distilled White Vinegar
2 Teaspoons Vanilla Extract BLEND ALL WET INGREDIENTS TOGETHER
CREAM CHEESE FROSTING
1 POUND OF CREAM CHEESE SOFTENED = TWO BRICKS
4 CUPS OF POWDERED SUGAR
2 STICKS OF UNSALTED BUTTER
1 TEASPOON OF VANILLA EXTRACT
BLEND TOGETHER UNTIL STIFF PEAKS FORM
DIRECTIONS
Preheat oven to 350F degrees. Shift all the above dry ingredients together, then blend all the wet ingredients together. Next in a mixing bowl, combine the dry ingredients and wet ingredients blending using a standing or hand mixer. Lightly grease and flour 2 cake pans and pour batter evenly in both pans, bake at 350 degrees for 30 minutes. After 30 minutes the cake should be done, to test doneness, insert a toothpick in the center of each cake, the toothpick should come out clean. Prepare Frosting, frost cake when cooled. Enjoy!
