TWICE BAKED LOADED POTATOES

When it comes to making side dishes in my house, we usually go with Rice, French Fries, Mashed Potatoes or a Salad, I could not remember the last time that I prepared Twice Baked Potatoes as a side dish, so I decided to make some. I knew my family would not mind because this recipe is something that I have not fixed for a while.
So, off to the grocery store, I picked up 4 extra-large Russet Idaho baking potatoes to make my Twice Bake Potatoes, they always bake up real nice and soft, and they have such an amazing taste that will pair with any meat dish. I love eating Twice Baked Potatoes with Fried Chicken or Pork Chops, and they are also a great side kick to Meat Loaf.
There are so many ways of making Twice Baked Potatoes, you can add cream, sour cream, cheese, butter or various meats like bacon, ground beef or ham, there is no right or wrong way to do this. You can also add broccoli and a cheese sauce. Whatever you decide to add in your recipe will be fine. I added more butter in my recipe instead of using cream, but you can add cream If you desire in your recipe.
The bottom line is you know what flavor you like in potatoes so, just do you and add whatever your family likes. I just wanted you guys to see how Twice Baked Potatoes are put together, give this recipe a try and get creative and have fun I am sure it will turn out great. Enjoy!

TWICE BAKED LOADED POTATOES
INGREDIENTS
4 Large Idaho Potatoes
1 Teaspoon Olive Oil
2 Sticks Butter (Salted or Unsalted)
16 oz Carton of Sour Cream
1 Teaspoon of Onion Powder
1 Teaspoon of Garlic Powder
1 Tablespoon of Salt
2 Tablespoons of Chives
4 oz Cheddar Cheese
8 oz Bag of Cheddar Cheese Cubes
Ground Black Pepper to taste
8-10 Slices of Bacon (Crumbled)
DIRECTIONS
Scrub and wash potatoes, pat dry with paper towels, pierce potatoes with fork on all sides to vent while cooking and rub with Olive Oil all over. Bake Potatoes on baking sheet at 350F degrees for 1 hour until fork tender.
Slice potatoes in half and remove the insides of potatoes, leaving a coating in the skin to hold skin in place. In large bowl while potatoes are hot, add the 2 sticks of Butter, 8 oz of Sour Cream, add Onion Powder, Garlic Powder, Salt and Chives, mash together until well blended, add the Cheddar Cheese stirring until blended
.
Fill potato skins with potato mixture, top with cheese cubes and bake at 350F degrees for about 5-10 minutes until cheese is melted, top with crumbled Bacon and Sour Cream. Enjoy!
